From 19 October to 17 January we serve a game menu of three to six courses in Eibergen. The game comes largely from the hunter. You dine in a restored textile factory from 1834, some 400 metres from the town centre.
Every game menu begins with an amuse-bouche and bread. The more courses, the more extensive the menu: dishes with a note are added from that number of courses.

Game from the hunter
The game on this menu largely comes straight from the hunter. The rules for this are strict. A hunter may only supply small quantities of game they have shot themselves directly to a restaurant, and only with a game hygiene certificate. For this, the hunter first inspects the animal personally. Then someone who has completed the game hygiene course fills in the second part. If either of them notices anything unusual, the game may not be sold.
Two game menus per season
Our game season runs from 19 October 2026 to 17 January 2027. We expect to change the menu around 30 November, when a second game menu with new dishes follows. In the first menu, the number of dishes grows with the number of courses. With three courses you have smoked duck with celeriac and buckwheat, venison with cranberry jus and pumpkin, and to finish the chestnut mousse. With four courses, guinea fowl with Jerusalem artichoke and a chanterelle sauce is added. With five courses halibut with Brussels sprouts and bacon, and with six courses wild boar with blackberry, black garlic and hazelnut. Every menu begins with an amuse-bouche and bread.
Cheese trolley and wine
Not quite ready for dessert after the venison? Then let the cheese trolley come by, and we will serve cheese from the trolley before dessert. As for wine, our staff will gladly advise you: a single glass with the main course, or something fitting with every course.
Staying the night after dinner
De Kastanjefabriek is a hotel and restaurant under one roof, so after an evening of game there is no need to get back on the road. Our 28 rooms are under the same roof. Where does the game come from?
Largely straight from the hunter. A hunter may supply small quantities of game directly to a restaurant, accompanied by a game hygiene declaration.
When does the game season start in the Netherlands?
On 15 October the hunting season opens in the Netherlands for, among others, hare, pheasant and wood pigeon. Red deer and wild boar do not fall under this ordinary hunt. They may only be shot with permission from the province, to manage the population or to prevent damage. Our game menu is on the menu from 19 October 2026 to 17 January 2027.
Can I also order from the regular menu?
Yes. The game menu is served alongside our regular menu. So at the same table, one person can order game and another something from the menu.
I have an allergy or dietary requirement. Can I still join you?
Certainly. Let us know when you book and ask for the allergen menu at the table. The kitchen is happy to accommodate you.
Can I stay the night after dinner?

How far is it from Haaksbergen, Neede or Groenlo?
From Neede it is about an 8-minute drive, from Haaksbergen about 10 minutes and from Groenlo about a quarter of an hour. Parking is free on our own grounds and there are two charging points.
